Good Food, Decent Income

Time really does seem to fly! I am looking for work either in Mexico or in Asia (Taiwan? Korea? mainland China?). But I am working and I get paid every two weeks and my living expenses are low. I am working on filling my private schedule and estimate that I will be consuming less than 25% of what my income will be so I’m comfortable. I have to figure out a way to convert pesos to dollar to pay off both credit card debt and personal debt. Western Union is TOO expensive!

It looks like I’m slipping into raw again. Only this time, admittedly, it’s more intentional. Before I was living in an isolated place and was dependent on what I ordered online and that was delivered to my door…and naturally I ordered organic raw food. Occassionally I ordered chicken eggs (which I cooked) and cooked bagels but when the egg source stopped and the stove top remained covered as extra counter top space, I was raw for several months.

This weekend I made a salad…cabbage, celery, cucumber, onions, tomatoes, salt, olive oil and grapefruit juice. Wow! It was so satisfying. My GI tract was humming with enthusiasm. Okay, the lentils, rice and plain yoghurt of last week was yummy but the raw of this week is going to be both yummy and exciting! I

just finished three lesson plans for my elementary group and am now am working on two more plans for my intermediate group. In between planning sessions I had more of yesterday’s salad. (I made a bag batch so I could have some for several days) Wow! My insides are are giggling with delight.
